The NFL offseason is always a long one for football fans, and that was especially true in Dallas.

The 2020 season was a frustrating one for the Cowboys, dealing with backup QBs for most of the year after Dak Prescott suffered a season-ending injury.

Football is here for 2021 though, as the Cowboys will kick off the preseason in the Hall of Fame Game against the Pittsburgh Steelers.

Cowboys fans won't see much from their starters on Thursday, but there are plenty of guys fighting for their spots on the depth chart that are worth keeping an eye on.

Here are three to really watch out for.

1. Kelvin Joseph, Cornerback

There's no question about it — the Cowboys' secondary needs to show some serious improvement. That's what makes it so exciting that Kelvin Joseph has been one of the biggest standouts in training camp. The second-round pick will set foot on an NFL field for the first time on Thursday night, and a strong preseason could secure his starting spot in the Dallas defense.

2. Tony Pollard, Running Back

We obviously shouldn't expect Ezekiel Elliott to get much preseason work, and Tony Pollard is really the running back to watch. The 24-year-old has shown some serious promise in his first two NFL seasons, and this is looking like it could be the year that he really makes the leap. He's an interesting player to watch for two reasons. First, continuing to show off his big-play ability could help him continue to carve out a niche in the offense. Second, if he doesn't get a ton of preseason snaps then that would be a strong indicator that Dallas already plans to get him heavily involved this season.

3. Simi Fehoko, Wide Receiver

Amari Cooper, Michael Gallup and CeeDee Lamb are the Cowboys' top three wideouts. That's not in question. But who is going to get the chances in four-wide sets, or when those guys need a breather? Noah Brown is probably the favorite at this point, but don't sleep on fifth-round pick Simi Fehoko. He wasn't overly productive in the run-heavy Stanford offense, but he did account for a team-high 25.5% of the Cardinal's receptions and 32.9% of their receiving yards in 2020. With a big build at 6-foot-4 and 222 pounds but with 4.49 40-yard dash speed, Fehoko could have some serious potential.
